A creamy and decadent drink guaranteed to impress!

RECIPE
60ml SAIREN Exotic
20ml Passionfruit syrup
25ml Single cream
25ml Lime juice
1 whole egg white
50ml Soda water

METHOD
Combine all the ingredients, apart from the soda in a shaker and shake hard with strainer spring for one minute. Add three ice cubes and shake again until the ice has melted. Strain over 25ml of soda into a tall highball glass and place in the freezer for 3 minutes. Top with remaining soda until a sturdy foam rises from the glass like a souffle.
